I know how scary it can be to reach out to someone new, especially when it’s something as vulnerable as your health. We will create an individualized plan to support you in healing your relationship with food and body.

Carrie Schimmelpfennig

MS, RD, CEDS, Certified Intuitive Eating Counselor

I founded Shine Nutrition in 2019 and am a Certified Eating Disorders Specialist and Certified Intuitive Eating Counselor. 

​

Before opening Shine, I worked at a variety of levels of care in both eating disorder and substance use treatment centers. This includes working at the ACUTE Center for Eating Disorders in Denver, Colorado, where my patients had some of the most severe malnutrition and eating disorders cases in the country. 
 
I take pride in building a strong rapport with my clients and believe nutrition counseling should be a conversation. Together we will create meal plans, eating patterns, and goal setting to ensure clients achieve what they want from nutrition therapy.  
 

In my free time I love spending time outside, whether that be in the mountains or at the lake! I am a huge animal lover and if clients are interested will bring my dog Penny into the office during sessions. 


I love my work and believe my clients to be some of the bravest people I know. I consider it my privilege to support you on your recovery journey.
